First, I want to thank you for stopping by and taking a peak at my site! And for whatever the reason is that brought you here, I hope you find whatever it is you’re looking for, and more importantly, (because not all of us always knowwhat we are looking for), I hope I was able to share something useful and/or helpful to you and your life.
My name is Chelsea Mercede, I studied Nutrition & Dietetics at the university and graduated in 2012. I’ve worked many jobs around food and it wasn’t really until I worked in an organic market that I understood and really appreciated organic, whole foods, and learned the many many ways to prepare raw/vegan dishes. There is such a variety of specialty foods and numerous ways of preparation. When I was at the university- we didn’t cover a lot of this type of ‘healthy living’. The school focused on the traditional food pyramid and what USDA and FDA requirements are. It was and still is very disconcerting to me. Theres so much valuable information and scientific research on plant-based diets and yet so much of the world lives in the dark about basic, simple nutrition fundamentals. However, if you’re one of these types of people I am beyond elated to have you here and have the opportunity to open your eyes and take more control of what impact you on have on your own health. What you eat directly correlates with what type of output you have as well as all the affects you have on your own body and your body’s homeostasis.
A little bit more about me- around age 23, I developed adult acne. And because of this development- it triggered me to seek differences in hope to find a cure. One of which was eventually becoming a vegan. Now, becoming a vegan did not completely eliminate my acne- however eating a much cleaner and diet full of functional whole foods- I noticed a huge difference- a huge difference in the amount of inflammation and redness, etc. Anyways- that is something I still struggle with today but I can touch base on that later on in a post for you who are interested!
So- becoming a vegan, I realized an abundance amount of super foods, raw foods, nutritional value of raw foods, and the endless possibilities of delicious foods available. It was not a difficult transition for me by any means. I love food and nutrition- its so fascinating that we have such a direct impact of how our bodies function. Literally, we have direct capability to be in control of our physiological bodily functioning.
Enzymes are large protein molecules found in all living things – plant and animal. Your body is capable of producing two types of enzymes, metabolic and digestive. Digestive enzymes include things like protease, and lipase, and amylase for the digestion of proteins, carbohydrates and fats. In human physiological terms, metabolic enzymes are the spark of life. They are the catalyst for every single chemical reaction in your body – every process, every action, every muscle movement, every sense, every thought, every word and every deed. The more enzymes you have inside of you the more alive you become.
Food in its’ original, fresh, ripe, raw and unadulterated state contains naturally occurring enzymes which aid in its’ own digestion. When a peach falls to the ground the cell walls are broken and a bruise develops at the point of contact. The enzymes are liberated and the peach begins to digest itself. The same process occurs when we chew the peach. This greatly reduces the burden of digestion from your body since it does not have to go through the taxing process of manufacturing enzymes for the digestion of the peach.
This is a key point as the body expends a great deal of energy in the digestion of food. When you eat a cooked food meal, 80% of your body’s total available energy is expended in the processing of that meal. When you eat a raw food meal the energy expended in processing is reduced to only 20%. The less energy you expend on digestion the more energy you have available for life. Most people go through their entire lives totally unaware of their true potential because their bodies are perpetually under the heavy burden of processing the unnatural foods they are eating. – Hippocrates Health Institute
Its a matter of the more you know- you more you’re able to prone to make those simple changes. And I just hope to serve the purpose of relaying this information to you and potentially making a difference and helping you understand, learn and live* a healthier, ore radiant lifestyle. I don’t necessary ‘dieting’ or fad diets. Its a lifestyle. There needs to be a shift– with the mind and the body– in order for anything long term to take root.
Alongside health and nutrition~ what one puts in- one gets out, this goes for ones thoughts and behaviors. When we act in accordance with nature and give back to the Earth- and treat her with love and respect- this way of behaving will follow through in other areas of our lives- all of which will have a direct impact on how our brains function and are wired. We will live in harmony and truce with ourselves and others around us- live begins to open up doors we never thought were possible.
